Comparative study on the amino acids composition in three localPhaseolus vulgaris seeds varieties

Vergleichende Studie über die Aminosäure-Zusammensetzung von drei lokalen Sorten vonPhaseolus vulgaris-Bohnen

Zusammenfassung

Die gesamte Aminosäure-Zusammensetzung von drei Sorten vonPhaseolus vulgaris waren ähnlich. Alle hatten Mangel an schwefelhaltigen Aminosäuren, darüber hinaus bestand eine negative Korrelation zwischen dem Gehalt schwefelhaltiger Aminosäuren und dem Gehalt an Protein. Der Lysingehalt vonPhaseolus war relativ hoch, der Gehalt lag zwischen 8,05–8,63 g/16 g N. Tryptophan war etwas höher für die Giza-Varietät als bei den anderen. Der höchste Gehalt an freien Aminosäuren wurde für die Sorte Conteneder und Swissblan beobachtet. Cystin, Phenylalanin und Tyrosin waren in den Extrakten der drei Sorten nicht zu beobachten.

Summary

The overall amino acid composition of the three varieties ofPhaseolus vulgaris seeds were similar. All had a relative deficiency in the sulphur-containing amino acids, moreover, there was a negative correlation between sulphur amino acid content and the percentage of seed proteins. The lysine content of thePhaseolus seeds was relatively high, the amount ranged from 8.05 to 8.63 g/16 g N. Tryptophan was slightly higher for Giza variety than the others. The highest levels of free amino acids were recorded for Contender variety and Swissblan one. Cystine, phenylalanine and tyrosine were absent from the extracts of the three varieties.
