Abstract
Crude protein, amino acid composition and protein quality of horse bean (Mucuna urens) were studied. Crude protein of the defatted bean was 20.2%. Essential amino acid composition was similar to that of isolated soya bean protein.
When themucuna flour was given to rats as the sole source of protein, it did not support the growth of rats. The rats lost weight in 28 days and gave negative feed conversion efficiency ratio (FCE) and low apparent digestibility co-efficient.
