Abstract

The effect of potassium sorbate (PS) on growth ofAspergillus parasiticus andA. ochraceus and production of the respective micotoxins, aflatoxins and ochratoxin A, are reported. The presence of 0.5 and 1.0% PS in the medium partially inhibited mold growth and mycotoxin production, whereas 0.1% exerted stimulating effects.

Vengono riportati gli effetti del sorbato di potassio sulla crescita diAspergillus parasiticus eA. ochraceus e sulla produzione delle rispettive micotossine, aflatossine e ocratossina A. Concentrazioni dello 0,5 e 1,0%, a seguito di aggiunta ai terreni colturali alľinizio dello sviluppo fungino, inibirono sia la crescita fungina che la produzione delle micotossine. Concentrazioni minori (0,1%) mostrarono invece un effetto stimolante.
