SUBSTANTIATION OF THE STRATEGIC ALTERNATIVES FOR TRANSFORMATION OF BUSINESS MODELS IN RESTAURANT BUSINESS ENTERPRISES

The research paper presents the review of “strategy” and “business model” categories, substantiates indices for determining current business model strategic alternatives of restaurant enterprises, proposes the assessed verbal and numerical scale to decide on the strategic transformation of current restaurant business enterprise model, as well as it develops the strategic transforming matrix. The choice of alternative strategy is recommended depending on the matrix segments. The methodological tools are tested on the set of restaurant business enterprises and it is concluded that their implementation into practice provides the increase of decisions validity level regarding the basic principles application of the innovative advantage concepts in the competitive market.
